El escabeche era un m\u00e9todo de encurtido utilizado en la \u00e9poca romana como forma de conservar el pescado. Usaban vinagre, aceite y salmuera.<\/p>\n\n\n\n<p>Esta t\u00e9cnica se extendi\u00f3 por todo el Mediterr\u00e1neo y luego a Am\u00e9rica Latina durante la colonizaci\u00f3n. Cada vez cambiando. Pero compartiendo una base de vinagre que es el sabor principal de la receta.&nbsp;Hoy en d\u00eda se utiliza como m\u00e9todo de preparaci\u00f3n m\u00e1s que como m\u00e9todo de conservaci\u00f3n.<\/p>\n\n\n\n<p>En Puerto Rico, el escabeche se hace con ajo, cebolla y pimiento. Todo esto est\u00e1 en una mezcla de vinagre y aceite. Me gusta medirlo porque los dientes de ajo pueden ser muy peque\u00f1os o demasiado grandes.<\/li>\n\n\n\n<li><strong>Hoja de laurel- <\/strong>Us\u00e9 3 hojas de laurel.&nbsp;<\/li>\n\n\n\n<li><strong>Pimienta negra- <\/strong>Us\u00e9 1 cucharadita de pimienta negra en grano, pero la verdad es que est\u00e1n ah\u00ed para darle sabor porque no los como. <\/li>\n\n\n\n<li><strong>Vinagre- <\/strong>Us\u00e9 \u00bc de taza de vinagre blanco.<\/li>\n<\/ul>\n\n\n\n<div class=\"wp-block-group\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<div class=\"wp-block-group has-background\" style=\"background-color:#dee3d9\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 id=\"variaciones\"   class=\"wp-block-heading\"><strong>Variaciones<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Existen muchas variaciones en todo el mundo de este plato. Por ejemplo, la receta espa\u00f1ola se elabora con vino blanco y piment\u00f3n para darle color. Puedes picarlos en trozos grandes pero no demasiado finos para evitar que se quemen.<\/li>\n\n\n\n<li><strong>Foto 2:<\/strong> Corta las caderas por la mitad. Mezcla bien hasta que est\u00e9 bien sazonado.<\/li>\n\n\n\n<li><strong>Foto 4:<\/strong> Frie el pollo en \u00bc de taza de aceite durante 10 minutos por lado. Esto le dar\u00e1 al pollo un color dorado. Puedes cocinar el escabeche y luego retirarlas para evitar esto.<\/li>\n\n\n\n<li>Al almacenar sugiero usar un recipiente de cristal o ceramica.
