Guineitos en Escabeche are very easy to make. Boiled the bananas and make the escabeche.

Step 1

There are many ways of peeling and cooking green bananas, this is just one way. Cut the ends and make a line in the middle.

Step 2

In a big pan over high heat add water, salt and vinegar. Cook for 20 minutes or until fork tender.

Step 3

Let the guineos cool down. Slowly peel each green banana. The skin should come off easily.

Step 4

Cut the green bananas. I like to cut them to about 1/2 inch thick. Not too small or too big.

Step 5

Cut the vegetables. I like to cut the onion to about 1/4 inch thick. But it is just a preference.

Step 6

In a big pan add the vegetables, adobo, pepper, and bay leaves and cook. Then add the garlic and vinegar.

You can eat guineitos hot or cold. With or without food. But they go best next to a delicious rice.
