Alcapurrias de Yuca are crispy delicious fritters made from grated yuca and stuffed with flavorful meat.

step 1

First, add the seasonings and achiote oil to the grated yuca. Mix everything until is well combined.

Take parchment paper and cut it into big squares about 7 inches long. Add half of teaspoon of achiote oil to paper.

Take the yuca dough and place 1/2 cup on the parchment paper. Flatten it until you make a small circle.

Add 1/4 cup of your preferred filling to the middle of the dough. Make sure to place it in the middle.

Fold the alcapurria with both hands. Open the paper and shape any excess of dough on top.

Fry the alcapurrias de yuca for 3 minutes on each side. They should have a golden brown color.
