This Puerto Rican rice and pigeons is the one rice side dish that almost everyone on the island makes for the holidays or on special occasions.

Radish
Carrot
Persimmon
Artichoke

- oil - sofrito - tomato sauce - olives - seasonings - pigeon peas - water - rice

Step 1

In a large pot over high heat add the oil, olives, pigeon peas, and seasonings. Cook for 2 minutes.

Step 2

Add the water and wait for it to boil. Once boiling, add the rice, stir and cover. Cook for 10 minutes.

Step 3

Once the water has evaporated, stir the rice. Lower heat to medium and cook cover for 20 minutes.
