Puerto Rican Mojito de Coco
The Puerto Rican Coconut Mojito is very refreshing with a sweet, soft coconut flavor. The perfect cocktail with a taste of the Caribbean.

Ingredients

mint leaves

coconut milk

rum

Instructions
First, cut the lime into wedges. Add the lime and mint to your cup and lightly press down with a
muddle

Add the sugar, cream of coconut, and coconut milk, and stir for 15 seconds so the sugar can dissolve.
Add the rum, lime juice, ice, and club soda. Stir, garnish, and serve. Buen provecho!
Notes
Sugar-
I used sugar to sweeten the mojito, but you can also use a simple syrup if you have some. You can also use honey if you like.
Rum-
Bacardi is the preferred rum used in mojitos, but in this particular one, you can also use a coconut-flavored rum. I love the DonQ Coconut.
Club soda-
I have always used club soda to make any mojito, but a good substitute can be a lemon-flavored soda.
Lime juice-
I like to add this last so I can avoid it from splitting the coconut milk.
