This is the hands-down the BEST homemade Blueberry simple syrup. It can be used to flavor any drink. You can use it in cocktails, dirty sodas, coffee, or other drinks. It can also be used in desserts.
In a small pot, add sugar, water, and lemon juice over high heat. Cook for 5 minutes and stir for the first 2 minutes. Let the mix simmer. Remove from the heat.
Stir in the blueberry extract and the blue food coloring. Allow it to cool before storing. Use an airtight container to store it, and keep it in the fridge. ¡Enjoy and buen provecho!
Notes
Sugar-free syrup- Use granulated Stevia or Splenda. But we have to use less because these sugar substitutes are sweeter. If using Splenda or granulated stevia, use half of the sugar that the recipe calls for.
Lemon juice- I used lemon juice, but you can also use lime juice.
Food coloring- I used ¼ of a teaspoon, but you can use way less. A few drops will get the syrup blue. Just start with a few drops and see how dark you want the syrup to be.
Fresh blueberries- If you want to use the fresh fruit, you must leave out the extract. Then just add 4 cups of blueberries.
Yield- This recipe makes 2 ¼ cups of syrup.
Storing- You want to store this in the fridge for up to 2 weeks.
