The Blueberry Simple Syrup only takes 10 minutes to make with very few ingredients. The best part is that it is a very easy recipe that you’ll want to make over and over.

A bottle of a homemade blueberry syrup with a few measuring spoons on the side.

Let me introduce you to the Blueberry Simple Syrup! A super popular syrup when making the Puerto Rican blueberry shaved ice or blueberry limber.

But this is a very versatile syrup. This is the perfect recipe to drizzle over homemade oatmeal or fluffy French toast instead of your typical pancake syrup.

But in my case, my favorite way to use this syrup is to make the Puerto Rican blueberry shaved ice piragua. It is also delicious when we add it to a homemade pineapple lemonade.

    Recipe Ingredients

All the ingredients needed to make a homemade blueberry syrup.
    • Water & sugar- The base of our syrup is the water and sugar. The sugar part, besides adding the sweetness, also adds thickness to the syrup once it is cooled.
    • Lemon juice- The lemon juice will add acidity, which helps with balancing all the sweetness. In my opinion, it is a must-have ingredient.
    • Blueberry extract- Using a good quality blueberry extract always helps to not get an aftertaste in the syrup.
    • Blue food coloring-The food coloring is something that is not really necessary, but I like to add it. Feel free to leave it out if you want.

How to Make A Blueberry Syrup

    • Step 1: In a small pot, over high heat, add the sugar, water, and lemon juice. This only takes 5 minutes to cook. You just have to make sure to stir for at least the first 2 minutes so we can help the sugar dissolve faster.
    • Step 2: Turn off the heat, then you have to add the blueberry extract and the food coloring. Mix everything and let the syrup cool. The cooling also allows the syrup to thicken a little more. Once cooled, transfer to an airtight bottle.

Do I need fresh blueberries to make a syrup?

    • You don’t need fresh blueberries to make a blueberry syrup. But you can use them if you want to. All you have to do is add everything into the pan minus the food coloring. Cook for 10 minutes instead of 5. Let it cool, strain, and store. Note: you won’t need any blueberry extract.

How to make sugar-free blueberry syrup

    • To make the blueberry syrup sugar-free, substitute the white granulated sugar in the recipe for Splenda or granulated Stevia. Just use half of the sugar that the recipe calls for.

    Recipe Tips

    • Thickening- If you like to thicken your blueberry syrup, just add 1 teaspoon of cornstarch while cooking. Start from there and remember it will thicken more as it cools.
    • Bottles- Glass is recommended for storage, but it is ok to use a plastic airtight container as well.
    • Storing- This recipe must be kept in the fridge so it can safely last 2 weeks.

    Time :10 minutes mins
    servings :18 2 tbsp

    Ingredients

    • 2 cups water
    • 2 cups sugar
    • 2 tablespoon lemon juice
    • 2 teaspoon blueberry extract
    • ¼ teaspoon blue food coloring
Prevent your screen from going dark

    Instructions

    • In a small pot, add sugar, water, and lemon juice over high heat. Cook for 5 minutes and stir for the first 2 minutes. Let the mix simmer. Remove from the heat.
    • Stir in the blueberry extract and the blue food coloring. Allow it to cool before storing. Use an airtight container to store it, and keep it in the fridge. ¡Enjoy and buen provecho!

    Recipe Notes

    • Sugar-free syrup- Use granulated Stevia or Splenda. But we have to use less because these sugar substitutes are sweeter. If using Splenda or granulated stevia, use half of the sugar that the recipe calls for.
    • Lemon juice- I used lemon juice, but you can also use lime juice.
    • Food coloring- I used ¼ of a teaspoon, but you can use way less. A few drops will get the syrup blue. Just start with a few drops and see how dark you want the syrup to be.
    • Fresh blueberries- If you want to use the fresh fruit, you must leave out the extract. Then just add 4 cups of blueberries.
    • Yield- This recipe makes 2 ¼ cups of syrup.
    • Storing- You want to store this in the fridge for up to 2 weeks.
