Peel the plantains by cutting off both ends. Make a line through the middle of the plantain lengthwise deep enough to cut only through the skin. Remove any pieces left with a knife.
Take your mandoline and set it to one or the smallest setting possible. Take one plantain at a time and firmly press down on the mandoline. Move the plantain back and forth on the mandoline to cut it into slices. Once you're reaching the end of the plantain stop and discard that piece small piece.
In a large pot add 2 cups of oil over medium-high heat. Once the oil is very hot add all the plantain chips by sprinkling them over the oil. Quickly move them around to avoid them from sticking.
Cook for 3 minutes while stirring. Remove the chips onto a plate with a paper towel. Season right after taking out of the oil. Serve and enjoy!

Your plantain should be as green as possible. This will result in the desired fitness to cut the plantain and it will taste as savory as is supposed to.Cooking methods:

Airfrying for 6 minutes at 350° F.
Baking for 15 minutes at 350° F.
