    Platanutres (plantain chips)

    The perfect snack for when you’re craving something crispy, salty, and delicious are these Platanutres. Make a big batch in 10 minutes or less!

    Plantain chips are deliciously crunchy, savory thin slices of plantain that are fried until golden brown similar to the twice fried plantains.

    They’re one of the many delicious recipes you can make with plantains. In Puerto Rico, we know them by Platanutres but in other Latin countries are known by platanitos, chicharritos, or chifles.

    I love all types of chips. Malanga chips, potato chips, cassava chips. I remember as a kid eating platanutres when going to watch Lucha Libre (wrestling) with my grandma. They will sell the platanutres con ajo version.

    Why This Recipe Works

    • This is the perfect snack for adults and kids as well. Good to make for work or school lunches!
    • This is a healthier chip version than the store-bought options!
    • You can use plantain chips like in many Latin American countries where they’re used as a side or garnish to seafood like ceviche, codfish salads, or krab salads. 

    Recipe Ingredients

    • Plantains- I used 2 that were large, so if you only find small, skinny ones, you might have to use 3. Remember that you can find plantains in big chain supermarkets or Latin grocery stores.
    • Oil- I used 2 cups of vegetable oil because it has a neutral flavor. You may need more or less oil depending on the pot you use.
    • Seasoning- I always use ½ teaspoons of salt but you can add more.

    How To Make Platanutres

    • Photo 1: Peel the plantains by cutting the ends and removing the skin with a knife. Remember there are many ways to peel a plantain.
    • Photo 2: Use a mandolin on its thinnest setting and slice the plantain into circles by going up and down on the mandoline. Apply enough pressure to make clean cuts and watch your hands!

    • Photo 3: To cut the plantain chips you can use a mandolin, a food processor with a slicer attachment, or by hand. When you cut by hand make the cuts about the same thickness of a quarter.
    • Photo 4: To make long-shaped chips, cut the peeled plantain first in halves. Set the plantain flat on the mandoline, use a finger guard and carefully go up and down to make long plantain slices.

    • Photo 5: You can cut the plantains or circles, is just a matter of preference.
    • Photo 6: Add your oil to your large pan over medium-high heat. Make sure the oil is hot and sprinkle in the chip slices. Cook until the chips are golden brown.

    • Photo 7: Make sure to stir the chips around to get an even color and to avoid them from sticking.
    • Photo 8: When the chips are done, remove them onto a paper towel to drain all the excess oil. Sprinkle in your favorite seasonings and give it a good toss. 

    Cooking Variations

    • Airfryer- Pre-heat and set your airfryer at 350 ° F and cook for 6 minutes. You will have to do this in batches.
    • Oven- Preheat and set your oven to 350 ° F and cook for 15 minutes. When using this method, pour 1 tablespoon of oil on top of the chips and lay them flat in a tray without overlapping.

    Recipe Tips

    • The greener the plantain the better. If they’re yellowish the chips will have a hint of sweetness and will change the flavor of the platanutres.
    • To make garlic flavor platanutres just mix ½ teaspoon of salt and ¼ teaspoon of garlic powder.
    • Store in an airtight container or freezer bag for 1 week.

    Frequently Asked Question

    Should I fry or bake the plantain chips?

    Both cooking methods are great ways of cooking them. But in my opinion, frying is the best way. This is because by frying the plantain you can get very crispy chips without being overly dry.

    Platanutres (plantain chips)

    Ingredients
      

    • 2 green plantains
    • ½ teaspoons salt
    • 2 cups oil

    Instructions
     

    • Peel the plantains by cutting off both ends. Make a line through the middle of the plantain lengthwise deep enough to cut only through the skin. Remove any pieces left with a knife.
    • Take your mandoline and set it to one or the smallest setting possible. Take one plantain at a time and firmly press down on the mandoline. Move the plantain back and forth on the mandoline to cut it into slices. Once you're reaching the end of the plantain stop and discard that piece small piece.
    • In a large pot add 2 cups of oil over medium-high heat. Once the oil is very hot add all the plantain chips by sprinkling them over the oil. Quickly move them around to avoid them from sticking.
    • Cook for 3 minutes while stirring. Remove the chips onto a plate with a paper towel. Season right after taking out of the oil. Serve and enjoy!

    Recipe Notes

    Your plantain should be as green as possible. This will result in the desired fitness to cut the plantain and it will taste as savory as is supposed to.
    Cooking methods:
    • You can fry, just follow the recipe.
    • Airfrying for 6 minutes at 350° F.
    • Baking for 15 minutes at 350° F.
    Store: Use a resealable plastic bag or an airtight container and keep up to a week.
