Preheat the oven to 350°F. Line a baking tray with foil.
Mix the oil and the seasonings to make a paste. Rub this mixture onto all the pork chops. Place the pork chops in the tray and cook for 30 minutes.
Flip the pork chops and place 2 thyme twigs on each piece. Finish cooking for 30 minutes. Let the meat rest for 5 minutes nd enjoy!

Pork chops- It is important that you use bone-in pork chops; if you use boneless, they'll be super dry and hard. The pork chops you want to get are the ones with the bone and a layer of fat around the bone. They're called rib-eye pork chops. The more fat it has, the better.
Herbs- I always use thyme, but sage can also be used.
