Peel the onion. Chop the onion and green pepper into small cubes. Cut the luncheon meat into ½ inch pieces.
In a large pan over medium-high heat, add the oil. Add the onion and pepper and saute for 2 minutes. Add the spam, and cook for 2 minutes. Add the sofrito, tomato sauce, sazon, adobo, and oregano, and cook for 2 minutes.
Lower the heat to low, add the pasta sauce, and mix. Let it simmer for 10 minutes while the pasta cooks.
In a large stockpot, add the water and salt. Let the water come to a boil and add the pasta. Cook for 10 minutes, then drain.
Add the pasta to the spam mixture and mix. Serve, buen provecho.
Notes
Sauce- This is a red sauce recipe, but you can use a white sauce. My favorite is the cream cheese béchamel.
Pasta- You can use your preferred long noodle. You can use the traditional spaghetti, linguine, or fettuccine. Or even short pasta noodles.
Serving size- The serving size can change depending on how much pasta is served per person.
Storage- Save in an airtight container in your fridge for up to 4 days.
