This Puerto Rican Espagueti Con Jamonilla is one of the recipes that I grew up having at home. My grandma used to make this all the time, as many homes in Puerto Rico did.
But this is not a strange mix of ingredients for us because in Puerto Rico, we use spam in almost anything. We make rice with spam and even a sweet cheese and spam dip.
This is a recipe that starts smelling good from the moment you sauté the vegetables! This is one of those pasta recipes that are not too wet or saucy. But all the flavor sticks to the noodle.

Recipe Ingredients

- Vegetables- I used a white onion and green pepper. But this recipe is great for adding more vegetables. Great options are frozen vegetables like carrots and peas.
- Luncheon meat- You can use any brand you like and use the version you prefer. Nowadays, you can get luncheon meat that is made with less sodium or infused with other flavors.
- Puerto Rican cooking base- As with almost all savory Puerto Rican recipes, this calls for sofrito, tomato sauce, adobo, and sazón. I also added crushed oregano.
- Pasta sauce- You can use your favorite pasta sauce. I like to use the traditional kind.
- Spaghetti- I used 1 pound of spaghetti, but you can also use less. You will just have more of the luncheon meat per serving.
- Water and salt- The amount of water and salt will depend on how big your pot is. Just make sure to use enough salt to make the water a bit salty.
How to Make Puerto Rican Spam With Spaghetti

- Photo 1: First, start by roughly chopping the onion and pepper. Don’t worry too much about the size because these will get tender when cooked.
- Photo 2: Cut the spam into ½ inch pieces. You can cut them the size you like, but I like them on the smaller side.

- Photo 3: In a large pan, add the oil and sauté the vegetables for 2 minutes. Stir while cooking so the vegetables don’t burn.
- Photo 4: Add the sapam and also saute for 2 minutes. This is to give the spam a nice color.

- Photo 5: Add the sofrito, tomato sauce, and seasoning. This will also cook for 2 minutes. Stir while cooking so nothing sticks to the bottom of the pan and burns. Lower the heat to keep warm while we cook the pasta.
- Photo 6: In a big pot, add the water and salt. Let the water boil, and add the pasta to cook for 10 minutes. Keep in mind that the pasta may take more or less.

- Photo 7: Drain the pasta and add it to the spam mix. You can add the pasta to the spam or pour the mixture over each serving.
- Photo 8: Mix everything until well combined and serve hot.
Recipe Tips
- Noodles. You can use your favorite pasta, it doesn’t have to be noodles.
- Reheating. When reheating the spaghetti, you can add a little bit more sauce just so the noodles are not too dry.

- Peel the onion. Chop the onion and green pepper into small cubes. Cut the luncheon meat into ½ inch pieces.
- In a large pan over medium-high heat, add the oil. Add the onion and pepper and saute for 2 minutes. Add the spam, and cook for 2 minutes. Add the sofrito, tomato sauce, sazon, adobo, and oregano, and cook for 2 minutes.
- Lower the heat to low, add the pasta sauce, and mix. Let it simmer for 10 minutes while the pasta cooks.
- In a large stockpot, add the water and salt. Let the water come to a boil and add the pasta. Cook for 10 minutes, then drain.
- Add the pasta to the spam mixture and mix. Serve, buen provecho.
Recipe Notes
- Sauce- This is a red sauce recipe, but you can use a white sauce. My favorite is the cream cheese béchamel.
- Pasta- You can use your preferred long noodle. You can use the traditional spaghetti, linguine, or fettuccine. Or even short pasta noodles.
- Serving size- The serving size can change depending on how much pasta is served per person.
- Storage- Save in an airtight container in your fridge for up to 4 days.
