    Good as a refreshing Summer treat or as a frozen dessert is this Limber de Cheesecake! It is a very simple recipe where all you have to do is blend, pour, freeze, and enjoy!

    The perfect dessert in a cup is this Puerto Rican Limber de Cheesecake. Today I’ll show you how it is done!

    This is a limber that tastes just as you are eating a frozen piece of cheesecake. It is so good you’ll eat more than one!

    This is a creamy limber like the limber made with Nutella, the limber with peanut butter, or the queso limber.

    • Evaporated milk- I use any brand of evaporated milk I can find because most evaporated milk tastes the same.
    • Condensed milk- While you can use more sugar and avoid the condensed milk, I like the specific flavor it gives to the recipe.
    • Cream cheese- If possible, use a good brand cheesecake like Philadelphia. Trust me it makes a difference in taste.
    • Milk- I use milk but if you’re looking for a less creamy limber you can use water.
    • Sugar- A touch of sugar was needed to reach the right sweetness.
    • Graham crackers– The crackers are used as a topping. Trust me when I tell you they’re a must-have.

    How To Make Limber de Cheesecake


    • Step 1: Add everything besides the crackers to a blender. Mix for at least 2 minutes so everything mixes well.
    • Step 2: Crush the crackers and add some to the bottom of the disposable cups before and after pouring. Freeze for at least 10 hours or until the limbers are completely set.

    • If you want your limber to have some texture, crush more graham crackers into the mix.
    • Cover your limber to avoid getting any freezer taste.

    You can always use less sugar when making a limber. The only thing is that when you use less sugar your limber becomes icy. The mix should at least taste sweet to ensure a good consistency.

    Limber de Cheesecake tastes exactly like a delicious frozen cheesecake. It is creamy, soft, and very refreshing.

    • 5 disposable cups

    Ingredients
      

    • 8 ounces cream cheese
    • 12 ounces evaporated milk
    • 14 ounces sweetened condensed milk
    • 1 cup milk
    • ¼ cup sugar
    • 1 ½ graham crackers (optional)

    Instructions
     

    • Add everything into a blender besides the graham crackers. Blend for 2 minutes or until you have a smooth mixture.
    • Lightly crunch the crackers and add half of the crumbs to the bottom of your disposable cups with lids. Pour the mixture into the cups and top it with the rest of the crackers. Freeze for 10 hours. Enjoy!

    Recipe Notes

    • Sugar- You can leave the sugar out if you like. The only difference besides the sweetness will be in the texture that the limber will have. It will be slightly icy.
    • Molds- Limbers are always made in disposable cups. But feel free to use any popsicle mold for a different shape. 
    • Freezing time- Most of the time the limbers set in about 8 hours. But for super creamy limbers it usually takes anywhere from 8 to 12 hours to completely set.
    • Yield- This makes 5- 8oz limber.
