    Pumpkin Bread Pudding

    A classic dessert with an Autumn twist is this Pumpkin Bread Pudding. This has the same ingredients as the traditional bread pudding but with the flavors of a fall dessert. We add pumpkin, cinnamon, nutmeg, allspice, and a little bit of brandy!

    You may know this recipe as a Pumpkin Bread Pudding, but I call this a Budin de Calabaza, and I love it. This pumpkin bread pudding version is made with a silky caramel base that just complements the dessert.

    In my case, I grew up eating the traditional bread pudding but fell in love with the fall flavors where we add pumpkin to almost anything. Like in my flan with pumpkin or the pumpkin pound cake

    This is one of those fall desserts that you can make year-round and take as dessert for a potluck, for a Thanksgiving dinner, or just a family gathering.

    Recipe Ingredients

    All the ingredients needed to make a pumpkin bread pudding.
    • Sugar- The sugar is only needed to make the caramel for the pudding. You can leave it out if you like.
    • Milks- We use a combination of evaporated milk and condensed milk instead of using just whole milk. This is because these milks will add a distinct flavor to the dessert. Plus, the condensed milk is responsible for the sweetness of the recipe.
    • Pumpkin puree- I used canned pumpkin, but you can make your own fresh pumpkin puree. Just make sure that the pumpkin is well drained.
    • Raisins & brandy- Some people like adding raisins and others don’t. I like to add them, but first soak them in brandy or rum to add more flavor. If you like, you can leave the brandy or rum out.
    • Eggs- The eggs in a bread pudding are responsible for the binding of the bread with all the other ingredients in the recipe. I used only 2 eggs because I don’t like the bread pudding to have a strong eggy flavor or smell.
    • Butter- The butter adds flavor to the recipe. I use salted butter.
    • Spice mix- You can always make your own favorite fall spice mix. But what I like to use is cinnamon, nutmeg, allspice, and a little bit of vanilla extract.
    • Stale bread- I like using a Puerto Rican sweet bread, but any stale bread is good.

    How to Make A Pumpkin Bread Pudding

    • Photo 1: First, we add the brandy to the raisins. We do this so the raisins have time to rehydrate and plump up before adding them to the custard. Let them sit until we mix everything.
    • Photo 2: Cut your bread into small pieces. You can get clean cuts by using a knife or a more rustic feel by cutting the bread by hand. Add the bread to a big bowl.

    • Photo 3: Make the custard. In a big bowl, add the condensed milk and pumpkin puree. I like doing this first because the condensed milk is harder to mix with the rest of the ingredients because it is thicker. Then add the evaporated milk, eggs, vanilla extract, and spice mix. Mix until everything is well combined.
    • Photo 4: Add about half of the liquid mixture to half of the bread. Mix until you see no white of the bread. Add the other half of the bread and the rest of the liquid. Mix everything until all the bread is completely covered in the custard.

    • Photo 5: Make the caramel. In a small pan over high heat, add the sugar. After about the first minute, start stirring, and you will have almost no sugar lumps left. By this time, turn off the heat and keep stirring. The residual heat will melt that sugar.
    • Photo 6: Add the caramel to your mold. Carefully move the mold around so the caramel can cover the whole bottom of the pan and a little bit of the sides.

    • Photo 7: Preheat your oven to 350F. Add the raisins to the bread mixture, including the liquid that the raisins were in. Mix and add the mixture to your mold.
    • Photo 8: Put your mold in a bigger pan or mold so we can make a water bath. The water should cover at least half of the mold. Bake your bread pudding for 1 hour and 15 minutes.

    • Photo 9: Test the pudding for doneness by inserting a knife or toothpick in the middle of the bread pudding. It should come out clean if it is completely done. Then remove from the water bath so it can cool at room temperature.
    • Photo 10: Use a knife to run it around the border of your mold to release the pudding. Get a serving plate bigger than your mold. Place it on top of your mold and flip. The bread pudding should easily come off.

    Recipe Tips

    • To flip or not flip. Depending on where you’re from, the bread pudding is served as is in the same mold it was made in. But since we made this with a caramel base, we like to flip the bread pudding. But you can serve it however you like.
    • Sometimes when we flip the bread pudding, some of the bottom may stay stuck to your mold. This is just a visual thing, so if you like, you can cover the top with toppings like raisins, nuts, fruits, or even whipped cream.
    • Storing. Make sure to store the pumpkin bread pudding covered, because if not, it will dry out. Keep for no more than 5 days refrigerated.

    Ingredients
      

    • 1 can pumpkin puree
    • 1 can condensed milk
    • 1 can evaporated milk
    • 2 eggs
    • 4 tablespoons butter
    • 1 tablespoon vanilla extract
    • ½ teaspoon ground cinnamon
    • ½ teaspoon nutmeg
    • ¼ teaspoon allspice
    • 1 pound stale bread
    • ½ cup raisins
    • 2 tablespoons brandy
    • ½ cup sugar

    Instructions
     

    • Add the brandy to the raisins and let them sit until you prepare the rest of the recipe.
    • Cut your bread into small squares. You can do this with the help of a knife or with your hands. Add the bread to a big bowl.
    • In a big bowl, add the condensed milk and pumpkin puree. Mix until the pumpkin is completely mixed in. Then add the evaporated milk, eggs, butter, vanilla extract, cinnamon, nutmeg, and allspice. Mix until everything is well combined.
    • Slowly pour about half of the pumpkin mixture over the bread. Mix until all the liquid is absorbed by the bread. Add the rest of the liquids and mix until all the bread is covered by the pumpkin mixture. Let this rest for 10 minutes until you prepare the rest of the ingredients.
    • In a small pan over high heat, add the sugar. After 1 minute has passed, start stirring. The sugar will get clumpy, but it will still melt. Once you see that there are almost no sugar lumps left, shut off the heat and keep stirring.
    • Once the sugar is completely liquid, add it to your mold. Carefully move the mold around so the caramel covers the bottom of the pan.
    • Pre-heat your oven to 350F.
    • Add the raisins and liquid to the bread and mix. Now add the mixture to your mold. Put your mold in a bigger mold and add water to about half of the mold to make a bain maire. Cook for 1 hour and 15 minutes.
    • Remove the pan from the oven and the bain marie. Insert a toothpick in the middle, and it should come out clean. This means that the bread pudding is completely cooked. Then, let it cool.
    • Run a knife around the mold to make sure nothing is stuck to it. Take a plate bigger than your mold and put it over it. Hold tightly together and flip. You can serve right away or cover with plastic film or foil and store it in your fridge. Buen provecho!

    Recipe Notes

    • Bread- I used regular sliced white bread, but you can use your favorite type of bread. I have tried this with cinnamon bread, and it is delicious.
    • Brandy- You can use a brandy or rum to soak the raisins, but you don’t have to. You can also soak this in the same amount of whole milk.
    • Caramel- You don’t have to make a caramel for this recipe. This is more of a preference. If you don’t use a caramel, just grease the pan or use parchment paper.
    • Molds- You can use almost any mold you like. It can be rectangular, square, round, or even disposable ones. Just test the bread pudding for doneness by inserting a toothpick in the middle. If it comes out clean, it is cooked.
    • Store. Cover and refrigerate for up to 5 days.
