It doesn’t matter if it’s breakfast time or dinner time, this Coconut French Toast will always hit the spot. They’re fluffy and moist in the middle, with delicious caramelized borders.

These Coconut French Toasts are one of the breakfasts I make the most on the weekends. Once you make them, you’ll know why! These are better than the restaurant ones.
These French toasts are as good as my coconut flavor pancakes, or the coconut flavor dutch baby, or even the coconut flavor cinnamon rolls. Good for breakfast, lunch, or dinner. As a breakfast, serve with some maple syrup and a dollop of compound guava butter.
But my favorite way to serve this is as a dessert with a big scoop of homemade passion fruit sorbet.

Recipe Ingredients

- Eggs- The eggs, in combination with the milk, will make the custard for the French toast.
- Coconut milk & cream of coconut- The coconut milk I use is canned, and that’s the one I always suggest using. This is because it has a stronger flavor than the carton coconut milk. The coconut cream will deepen the coconut flavor, but it also adds sweetness to the recipe.
- Cinnamon & vanilla- These two ingredients, in combination, enhance the sweetness in the recipe and balance out all the flavors.
- Salt- The salt is always needed in a sweet recipe because it really makes a difference in flavor.
- Butter- The butter is used to cook the French toast. But you can also use cooking spray if you want to avoid using butter.
- Bread- I just used simple white sliced bread, but you can use your favorite sliced bread.
How to Make Coconut French Toast

- Photo 1: Take a small dish that is big enough to fit each slice of bread. Then the first thing we do is beat the eggs by them selfs first. This is because it will be harder to mix them if we add the other liquids.
- Photo 2: Then add the salt, vanilla, cinnamon, and milk. Beat until everything is combined. The ratio should be half eggs and half milk.

- Photo 3: In a griddle, skillet, or pan, add some butter. Set your heat to medium-high and let the butter melt. Then soak the bread in the egg mixture on both sides. Place the French toast on your griddle. Cook for 2 minutes.
- Photo 4: Flip your French toast and cook for another 2 minutes. You can keep the toast in the heat longer, depending on how caramelized you want the top to be. Then serve!
Recipe Tips
- Make ahead- Did you know you can make these ahead of time? You can make the egg mixture and let the bread soak overnight. But this works best when you have thick slices of bread. Then you can bake in the oven.
- You can add more of a coconut flavor by changing the vanilla extract to a coconut one.
- You can use cinnamon bread, and this will be delicious!

Coconut French Toast
Ingredients
- 3 large eggs
- 6 ounces coconut milk canned
- 4 tablespoons cream of coconut
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ¼ teaspoon ground cinnamon
- 6 tablespoons butter
- 6 bread slices
Instructions
- First, add the eggs to a big bowl and beat them. Then add coconut cream, coconut milk, vanilla extract, cinnamon, and salt. Mix until you notice that the cinnamon is all combined.
- Preheat your griddle to 375°F or medium-high if using a pan. Once the griddle or pan is hot, add the butter.
- Dip each bread into the egg mixture on both sides. Do this until you notice that all the bread is covered with the mixture and it looks moist. (*See notes on bread for preferred texture).
- Place the bread on your pan and cook for 2 minutes on each side. If you want to caramelize more the bottom of the bread, you can leave it on the heat a little bit longer.
- Remove the breads into your serving dish. Serve with syrup or toppings of choice. Buen provecho!
Recipe Notes
- Bread texture note- If you like your French toast to be on the firmer side, toast the bread before dipping it in custard. You need to toast the bread until it has a very light brown color. This will help with having an all-around firm French toast.
- Milk- The best milk to use is canned coconut milk of good quality. Not all of the coconut canned milks are good. I like using the brands Goya, Thai Kitchen, and Great Value from Walmart.
- Bread- I usually used just plain white slices of bread. But you can use brioche, cinnamon bread, or any thick bread you like.
- Make ahead- You can make the egg mixture 2 days ahead and just use it as normal. But you can also make the mixture and add all your bread to it, and just leave it soaking overnight. Then you just bake.
- Toppings- As far as the toppings go, a good maple syrup is all I like to do, but powdered sugar is amazing. You can also serve with coconut flakes, fruits, or nuts.
- Freeze- You have to let the French toast completely cool, preferably in a rack so the steam won’t make them soggy. Then store in a bowl with a lid or freezer bag.
