    Coconut Lemonade

    The Coconut Lemonade is one of the most popular drinks in Puerto Rico, where we call it, limonada de coco. It is a refreshing drink with a delicious tropical flavor. It is fresh, creamy, and delicious!

    Nothing better on a hot summer day than to drink a Coconut Lemonade. This is a drink made with coconut milk and “lemons”. Not the yellow lemons that you know, but green ones.

    Let me explain. What happens is that in Puerto Rico, both yellow lemons and limes, we call them lemons or limones. We just separated them by color.

    This coconut milk lemonade is almost like drinking a coconut mojito, but without the rum. I also have many delicious lemonades that you can try, like lemonade with berries, lemonade with pineapple, or Puerto Rican passion fruit lemonade.

    Why This Recipe Works

    • Even though this is a summertime favorite, you can make this year-round.
    • No special ingredients, you can find everything in your local supermarket.
    • You can have this as a regular or frozen drink.

    Recipe Ingredients

    • Coconut milk- Use canned coconut milk. I always tend to you off-brand products if they’re similar. But for coconut milk, is best to stick to name brands because they are good quality milk. Some off-brand coconut milk lacks creaminess, and it tastes just like you’re using carton milk. If you can get your hands on fresh coconut milk, that’s great, but it takes a little effort.
    • Lemons or limes- While I used limes to make the juice in this recipe, you can use lemons as well. The flavor will vary slightly, but not much. It will still be a delicious drink. Try using fresh fruit when possible that the bottled options because it makes the recipe taste better.
    • Coconut cream- The coconut cream will add a more intense coconut flavor, plus it adds sweetness. We need this sweetness to balance out the tartness of the lime juice. Make sure that you use a coconut cream like the Coco Lopez brand, because some cream of coconut doesn’t have the sweetness needed for the recipe.
    • Water- This is where my recipe is different than the rest. Most recipes don’t add water, but I do. If you don’t add water, this will almost have a smoothie texture. Especially when you refrigerate this, because the coconut milk tends to solidify.

    How to Make A Coconut Lemonade


    • Step 1:This is as simple as adding everything into a blender, blending for a minute, and serving. Now you can also mix everything by hand by suggesting mixing the coconut milk and cream first. This is because the coconut cream is lumpy and hard to mix. Once that is well mixed, then add the rest.

    Recipe Tips

    • I always suggest refrigerating the drink before serving. This is because this is such a creamy drink that even over ice, it can taste warm.
    • You can make this into a frozen drink. Just take whatever cup you serve in and add the same amount of liquid to ice. Blend, and you’ve got a frozen coconut lemonade!

    Ingredients
      

    • 2 ounces lime juice (59ml)
    • 6.5 ounces coconut milk (200ml)
    • 7.5 ounces cream of coconut (213g)
    • 8 ounces water (237ml)
    Prevent your screen from going dark

    Instructions
     

    • In a blender, add the lime juice, coconut cream, coconut milk, and water. Blend for 1 minute. Chill in the fridge until ready to serve. Serve over ice and enjoy.

    Recipe Notes

    • I always recommend chilling the recipe before serving.
    • Make sure to use coconut milk from a can and not a carton. Because the milk from the can is richer but also heavier in calories. So if you choose carton milk, the recipe with end less creamier but still delicious.
    • When you refrigerate the lemonade, it will become thick, and it can separate. But don’t worry, this is normal. Just stir the drink before serving.
